Prudencia is a restaurant located in the historical center of the city, La Candelaria. Celebrated Colombian architect Simón Vélez has refurbished the carefully preserved Republican era house with his signature use of bamboo, glass and raw metal, creating a dialogue between the old and new. Chefs Meghan Flanigan and Mario Rosero base this culinary project on on-going ethno-gastronomic investigations into the evolution of culinary culture through migration. Traditional preservation techniques such as canning, curing, pickling, salting and smoking are used to create itinerant and flavorfully surprising menus that change every week. Open for a four-course set price lunch Monday through Saturday.
